Homemade Thin Mint Cookies Recipe

Long-time readers know that my hands-down favorite Girl Scout cookies are Samoas – they’ve even inspired many recipes on this blog, from Samoa Baked Donuts to Samoa Macarons.

But my dad’s favorite cookies are the Thin Mints, which are conveniently available every year right around his birthday, but the rest of the year – they are nowhere to be found!

My daughter got it in her head that we needed to make grandpa a batch of his favorite cookies. Rather than make a giant mess making homemade thin mints from scratch, I suggested that we make these super easy 2-ingredient Thin Mints.

This is the perfect no-bake cookie recipe to make with kids – there is no measuring or precision of any kind required – just melt the Andes Mint and dip those Ritz crackers in!

The result is crunchy, buttery, mint-chocolate cookies with just a hint of salt that nicely amps up the chocolate flavor.

Personally, I loved the slight hint of salt in these “cookies” but if you’re really not a fan of salty and sweet, you can use Ritz Hint of Salt crackers or Chocolate Wafer Cookies instead – maybe even OREO Thins?! (The chocolate wafer cookies would be a more authentic swap – I just don’t ever have them on hand and I always have Ritz on hand.)

Do I need to refrigerate homemade thin mint cookies? These cookies can be kept out at room temperature or stored in the fridge – whichever you prefer. Be sure to use an airtight storage container and place wax or parchment paper in between layers to prevent the chocolate coating from sticking to other cookies.

Homemade Thin Mints Ingredients

• Ritz Crackers
• Thin Mints (can use full mints or the chips)

• Dipping Tools or Fork
• Cookie Sheet with parchment paper or a silicone baking mat

How to Make Ritz Cracker Thin Mints

Line two cookie sheets with parchment paper and set aside.

Place the thin mints in a microwave-safe bowl and heat for 30 seconds. Stir well and reheat 20 more seconds if needed.

Working with one cracker at a time, use a fork or dipping tool to immerse each cracker in the melted chocolate and then allow the excess chocolate to drain off.

Set the chocolate-covered cracker on the prepared cookie sheets to set.

Let dry for 2 hours before storing using individual sheets of parchment to prevent the cookies from sticking.
